Playoff Weekend Recipe – Peanut Dip

What You’ll Need:
1 Cup of Cream Cheese, Softened
1 Cup of Smooth Peanut Butter
8-oz. Container of Cool Whip, Divided
1 Cup of Roasted Peanuts
½ Cup Chocolate Sprinkles
Vanilla Wafers, Pretzels, or Graham Crackers for Dipping

Directions:

Combine the cream cheese, peanut butter, cool whip (reserving ¼ cup aside), and peanuts in a large mixing bowl with a spatula until smooth. Wrap the mixture in plastic wrap and refrigerate for 30 minutes.
Remove from the wrap and use hands to press the mixture into a football shape on a flat serving platter.
Press the chocolate sprinkles into the side of the football, surrounding it completely.
Use a spoon or piping bag to create laces with the remaining cool whip on the center of the football.
Surround the dip with vanilla wafer, pretzels, or graham crackers for dipping.

Recipe of the week: Peanut Butter Pie

Ingredients
1 ¼ cups chocolate cookie crumbs
¼ cup white sugar
¼ cup butter
1 (8 ounce) package cream cheese, softened
1 cup creamy peanut butter
1 cup white sugar
1 tablespoon unsalted butter, softened
1 teaspoon vanilla extract
1 cup heavy whipping cream

Directions:

  • Step 1Preheat oven to 375 degrees F (190 degrees C).
  • Step 2Combine 1 1/4 cup cookie crumbs, 1/4 cup sugar, and 1/4 cup butter; press into a 9-inch pie plate. Bake in preheated oven for 10 minutes. Cool on wire rack.
  • Step 3In a mixing bowl, beat cream cheese, peanut butter, 1 cup sugar, 1 tablespoon butter, and vanilla until smooth. Whip the cream, and fold into the peanut butter mixture.
  • Step 4Gently spoon filing into crust. Garnish pie with chocolate or cookie crumbs if desired. Refrigerate for several hours before serving.

Weekly Recipe: Peanut Hummus

Ingredients
1 15 oz can chickpeas, drained
2 tablespoons peanut butter*
1 lemon, juiced or 2 tablespoons lemon juice
1 large clove garlic
1 tablespoon olive oil
½ teaspoon salt

Directions
2 tablespoons water, plus more as needed
Additional spices or add-ins of choice (½ tsp cumin, ½ tsp paprika, pinch of cayenne pepper, 2 roasted red peppers, fresh chopped parsley, etc)
Instructions
Combine all ingredients in a food processor and blend until smooth. If necessary, add more water to reach desired consistency.
Store in an airtight container in the fridge for up to one week.

Weekly Recipe : Peanut Salsa

Pair this rich salsa with grilled shrimp, pork, or poultry.

Ingredients

  • 3 dried pasilla or guajillo chiles (about 1 1/2 oz.), stemmed and seeded
  •  2 dried ancho chiles (about 1 1/2 oz.), stemmed and seeded
  •  3/4 cup chopped white onion
  •  3 cups boiling water
  •  1 cup unsalted dry-roasted peanuts
  •  1 tablespoon light brown sugar
  •  1 1/2 teaspoons kosher salt
  •  1 1/2 cups water

How to Make It

Heat a large skillet over medium-high. Add chiles; cook 90 seconds or until fragrant. Place chiles in a heatproof bowl; add onion. Cover with 3 cups boiling water; let stand 30 minutes. Drain well; place in blender. Add peanuts, sugar, salt, and 1 1/2 cups water; process until smooth, stopping to scrape down sides.

Serves: about 8

Total Time: 1 hour

Ingredients

1⁄2 cup hot sauce
1⁄4 cup honey
1⁄2 tsp garlic power
1⁄2 tsp ground red pepper
1 Tbsp unsalted butter
8 oz. unsalted dry-roasted peanuts
1⁄2 tsp salt
granulated sugar

Directions

Preheat oven to 350ºF. Add hot sauce*, honey, garlic, and red pepper to medium saucepan on MED/LOW; stirring occasionally for five min.
Stir in butter. Increase heat to MED, add peanuts; stir for five min.
Pour peanut/hot sauce mixture onto lightly greased cookie sheet; spread thin.
Bake 20 min, stirring every five minutes**.
Remove from oven; sprinkle with salt, then lightly with sugar.
Transfer roasted peanuts using a fork to a second greased cookie sheet; sprinkle with sugar a second time.
Stir mixture with fork. If peanuts clump, sprinkle more sugar and stir***. Allow to cool, then enjoy
